Provides the sour flavour typical of Indian curries and sweet & sour dishes. Use as a marinade for chicken or lamb, brush lightly onto grilled fish or use as a sharp dip for samosas.

Preperation
Remove all packaging and immerse Tamarind block in 340ml/12fl oz of warm water for 30 mins. Remove and place in a sieve over a bowl. Extract paste by rubbing soaked Tamarind through sieve with the back of a spoon. Discard skin & seeds.
